Essentially, the Food (or Chyme) the blue stuff in the video, is unable to mix with secretions from the pancreas and gall bladder (Bile), the yellow stuff. This Bile contains enzymes that digest fats. The duodenum is bypassed, which means that the chyme from the stomach is moved straight from the stomach to the last part of the ileum, onto the colon and thus outside of the body. This allows for both reduced ability to eat high amounts of food (Size reduction), and the inability to digest fats.
